A Few Healthy Food Substitutions
Substituting for Fat
or Egg
For best results, substitute either
for fat or egg, not both. Use an equal
portion of pureed fruit (such as applesauce
or bananas), nonfat yogurt, nonfat buttermilk,
or nonfat ricotta cheese for each egg (
1 egg equals approximately ¼ cup)
or for the amount of fat called for in
the recipe.
Reducing Eggs
Use 2 egg whites and 1 whole
egg in recipes that call for three eggs. Or,
for recipes that call for 1 egg, use 1
egg white or an egg substitute equivalent
to 1 whole egg.
Reducing Fats
Replace organic butter
with same amount of organic applesauce,
plain organic yogurt or organic baby prunes.
Thicken Gravies or Soups
Add ¼ to ½ cup
of fresh barley and stir in the soup or gravy
for about 20 minutes.
