Cranberry Oat Muffins

  • 1 C oats
  • 1 C orange juice
  • ¾ C nonfat buttermilk
  • 3 C flour
  • 4 tsp. baking powder
  • 1tsp. salt
  • ½ tsp. baking soda
  • 1 C sugar
  • ¼ C applesauce
  • 1 whole egg plus 2 egg whites, beaten lightly
  • 1 Tbs. vanilla
  • ¼ tsp. nutmeg
  • 2 C cranberries (fresh or frozen)

Preheat oven to 400 degrees. Lightly spray 24 muffin cups with nonstick cooking spray. Stir together oats, orange juice and buttermilk in a large bowl; set aside for 5 minutes. In a medium bowl, sift together flour, baking powder, salt, baking soda, and sugar. Sprinkle with additional chopped chocolate, if desired.
